Prepare the Filling
In a large skillet, melt butter over medium heat. Add flour and stir constantly for about 2 minutes until lightly browned. Gradually whisk in the milk, stirring until the mixture thickens. Add chopped ham, shredded cheese, salt, pepper, and nutmeg. Mix well and cook for an additional 2-3 minutes. Remove from heat and let cool.

Shape the Croquetas
Once the mixture is cooled, use your hands to form small logs or patties about 2 inches long. Place them on a tray.

Prepare for Breading
In a bowl, beat the eggs. Place breadcrumbs in another shallow dish. Dip each croqueta in the beaten eggs, then roll in breadcrumbs to coat thoroughly.

Fry the Croquetas
In a deep skillet or frying pan, heat oil over medium-high heat. Once hot, carefully add the croquetas in batches, frying until golden brown on all sides (about 3-4 minutes). Remove and drain on paper towels.

Serve warm with dipping sauce of your choice.
