Prepare the Ingredients

Chop the onion, slice the bell peppers, mince the garlic, and rinse the shrimp.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.

Add Bell Peppers

Stir in the sliced bell peppers and cook for an additional 3-4 minutes until they are tender.

Cook the Shrimp

Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.

Add Wine and Tomato Sauce

Pour in the white wine and tomato sauce. Stir well to combine and let it simmer for 5-7 minutes. Season with salt and black pepper to taste.

Prepare the Salad

While the shrimp is simmering, prepare the side salad with lettuce, sliced tomato, and cucumber.

Serve

Serve the shrimp enchilados over a bed of white rice, garnish with chopped cilantro, and enjoy with the side salad.
