    Prepare the Beans

    Rinse the black beans under cold water and soak them in a pot with enough water to cover them by several inches for at least 8 hours or overnight.

    Cook the Beans

    Drain the soaked beans and return them to the pot. Add 4 cups of fresh water and bring to a boil. Reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours or until the beans are tender.

    Sauté Vegetables

    In a separate skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, and chopped bell pepper. Sauté until the vegetables are soft, about 5-7 minutes.

    Combine and Season

    Once the beans are tender, stir in the sautéed vegetables and add salt and black pepper. Let the mixture simmer for an additional 10-15 minutes to allow the flavors to meld.

    Serve

    Remove from heat and serve hot as a side dish or over rice.
