Preparation

  1. 1

    Rinse Rice

Rinse the wild rice and brown rice under cold water until the water runs clear. Drain well.

  2. 2

    Prepare Vegetables

Chop the onion, dice the carrot, and celery into small pieces.

Cooking

  1. 3

    Sauté Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5-7 minutes or until the vegetables are soft and the onion is translucent.

  2. 4

    Combine Rice and Vegetables

Add the rinsed wild rice and brown rice to the pot. Stir to combine with the vegetables.

  3. 5

    Add Liquids and Spices

Pour in the vegetable broth and add thyme, sage, black pepper, and salt. Bring the mixture to a boil.

  4. 6

    Simmer Rice

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45-50 minutes, or until the rice is tender and has absorbed most of the liquid.

  5. 7

    Fluff Rice

After the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Then, fluff the rice with a fork.

  6. 8

    Toast Almonds

Toast the slivered almonds in a dry skillet over medium heat until golden brown, about 3-5 minutes.

  7. 9

    Combine Almonds

Gently stir the toasted almonds into the rice pilaf before serving.
