    In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice. Mix well until all ingredients are incorporated.

    Marinate the Pork Ribeye

    Place the pork ribeye in a shallow dish or resealable plastic bag. Pour the marinade over the pork, ensuring it is evenly coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Cooking

    Preheat the Grill or Skillet

    Preheat your grill or skillet over medium-high heat. If using a skillet, add a little olive oil to prevent sticking.

    Cook the Pork Ribeye

    Remove the pork ribeye from the marinade and let excess marinade drip off. Place the pork ribeye on the hot grill or skillet. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 145°F (63°C) for medium doneness.
