Prepare the Pork
Slice the pork tenderloin into 1-inch thick medallions. Season with salt and black pepper on both sides.

Add the Liquids
Pour in the Madeira wine and bring to a simmer, scraping up any bits from the bottom of the skillet. Allow to reduce for about 3-4 minutes.

Finish the Sauce
Lower the heat and stir in the heavy cream, thyme, salt, and pepper. Simmer for another 2-3 minutes until the sauce thickens slightly.

Combine
Add the cooked pork medallions back to the skillet, coating them in the sauce. Let them warm through for about 2 minutes.

Cook the Potatoes
Boil potatoes and unpeeled garlic cloves in salted water until fork-tender, about 15-20 minutes.
