For the Pecan Chicken Etouffee

    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked. Remove from the skillet and set aside.

    Make the Roux

    In the same skillet, add the remaining butter (2 tablespoons) and heat over medium heat. Add the flour and stir constantly for about 5 minutes until the roux turns a golden brown color.

    Sauté the Vegetables

    Add the diced onion, green bell pepper, celery, and minced garlic to the roux. Cook for about 5-7 minutes until the vegetables are softened.

    Add Chicken Broth and Seasonings

    Slowly pour in the chicken broth while stirring to avoid lumps. Add the cajun seasoning, chopped pecans, and adjust salt and black pepper to taste. Bring the mixture to a simmer.

    Combine with Chicken

    Slice the cooked chicken breasts into bite-sized pieces and return them to the skillet. Simmer for an additional 10 minutes, allowing the flavors to meld together.

    Finish with Green Onions

    Before serving, stir in the sliced green onions and remove from heat.

For the Cheddar Grits

    Boil Water

    In a large pot, bring 4 cups of water to a boil. Add salt to taste.

    Cook the Grits

    Once the water is boiling, gradually add the grits while whisking to prevent lumps. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally, until the grits are thick and creamy.

    Add Cheese and Butter

    Remove the pot from heat and stir in the shredded cheddar cheese and 2 tablespoons of butter. Mix until the cheese is melted and creamy. Season with additional salt and black pepper to taste.
