    Prepare the Steak

    Season the sirloin steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the steak for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

Mushroom Bordelaise

    Make the Bordelaise

    In the same skillet used for the steak, add the sliced mushrooms and minced shallots. Sauté for about 5 minutes until they are soft. Pour in the red wine and beef stock, scraping the bottom of the skillet to deglaze. Bring to a simmer and cook for about 10 minutes until the sauce has thickened. Stir in the butter and fresh thyme until melted and combined.

Crispy Onion Strings

    Fry the Onion Strings

    Soak the thinly sliced onion in buttermilk for about 30 minutes. In a separate bowl, mix the flour, cornstarch, salt, and black pepper. Heat vegetable oil in a deep pan over medium-high heat. Dredge the soaked onions in the flour mixture and fry in batches until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

Garlic Smashed Potatoes

    Prepare the Potatoes

    Boil the cubed potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add minced garlic, butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.
