Shrimp Preparation

    Prepare the poaching liquid

    In a large pot, combine 4 cups of water, the halved lemon, Old Bay seasoning, and salt. Bring the mixture to a boil over medium-high heat.

    Poach the shrimp

    Once the water is boiling, add the peeled and deveined jumbo shrimp. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Be careful not to overcook them.

    Cool the shrimp

    Remove the pot from heat and transfer the shrimp to a bowl filled with ice water to stop the cooking process. Let them cool for about 5 minutes, then drain and set aside.

Cocktail Sauce Preparation

    Mix the sauce ingredients

    In a medium bowl, combine the ketchup, horseradish, Worcestershire sauce, and lemon juice. Stir well to combine.

    Adjust seasoning

    Taste the cocktail sauce and add hot sauce to your liking for extra heat. Mix well.

Assembly

    Serve the shrimp

    Arrange the poached shrimp on a platter and serve with the zesty cocktail sauce on the side.
