Cooking Potatoes

    Boil Potatoes

    In a large pot, add 4 cups of water and 1 tsp of salt. Bring the water to a boil over high heat.

    Add Potatoes

    Peel and cut the Russet potatoes into quarters and add them to the boiling water. Cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Drain Potatoes

    Once cooked, drain the potatoes in a colander and set aside.

Making Garlic Infusion

    Prepare Garlic

    While the potatoes are cooking, peel the garlic cloves and mince them finely.

    Heat Oil and Butter

    In a small saucepan, combine 3 tablespoons of olive oil and 2 tablespoons of butter over medium heat.

    Add Garlic

    Once the butter has melted, add the minced garlic to the saucepan. Sauté for 2-3 minutes until fragrant but not browned.

    Add Pepper and Parsley

    Stir in 1 teaspoon of black pepper and 2 tablespoons of chopped fresh parsley. Remove from heat and set aside.

Smashed Potatoes

    Return the drained potatoes to the pot. Use a potato masher to gently smash them, leaving some chunks for texture.

    Combine with Garlic Mixture

    Pour the garlic infusion over the smashed potatoes and gently fold until well combined.

    Transfer the smashed potatoes to a serving dish. Optionally, garnish with additional parsley and a drizzle of olive oil before serving.
