Slice the Onions
Thinly slice the yellow onions and set them aside.

Chop the Garlic
Mince the garlic cloves and set them aside.

Prepare the Baguette
Slice the baguette into 1-inch thick slices and set aside.

Caramelize the Onions
In a large pot, melt the unsalted butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 30-40 minutes.

Add the minced garlic to the pot and cook for an additional 2 minutes. Then pour in the dry white wine, scraping the bottom of the pot to deglaze it. Allow the wine to reduce by half.

Stir in the beef broth, water, fresh thyme, black pepper, and bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

While the soup is simmering, preheat the oven to 350°F (175°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes or until golden brown.
