Preparation

  1. 1

    Slice the Onions

Thinly slice the yellow onions and set them aside.

  2. 2

    Chop the Garlic

Mince the garlic cloves and set them aside.

  3. 3

    Prepare the Baguette

Slice the baguette into 1-inch thick slices and set aside.

Cooking

  1. 4

    Caramelize the Onions

In a large pot, melt the unsalted butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 30-40 minutes.

  2. 5

    Add Garlic and Deglaze

Add the minced garlic to the pot and cook for an additional 2 minutes. Then pour in the dry white wine, scraping the bottom of the pot to deglaze it. Allow the wine to reduce by half.

  3. 6

    Add Broth and Seasonings

Stir in the beef broth, water, fresh thyme, black pepper, and bay leaves. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.

  4. 7

    Toast the Baguette

While the soup is simmering, preheat the oven to 350°F (175°C). Place the sliced baguette on a baking sheet and toast in the oven for about 10 minutes or until golden brown.

Serving

  1. 8

    Serve the Soup

Remove the bay leaves from the soup. Ladle the hot soup into bowls, top with toasted baguette slices, and sprinkle with Gruyere and Parmesan cheese.

  2. 9

    Broil the Cheese

Place the bowls under a broiler for 2-3 minutes or until the cheese is bubbly and golden brown.

  3. 10

    Enjoy

Serve immediately and enjoy your delicious French onion soup!
