Preparation of Potatoes

Wash and Peel
Thoroughly wash the Russet potatoes under running water to remove any dirt. Peel the skin off using a vegetable peeler.

Cut into Strips
Once peeled, cut the potatoes into even strips, about 1/4 inch thick to ensure even cooking.

Soak in Water
Place the cut potato strips in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps achieve a crispier fry.
Cooking the Fries

Heat the Oil
In a large heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 350°F (175°C) over medium-high heat.

Dry the Potatoes
After soaking, drain the potato strips and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes
Carefully add a batch of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.
