    Pat the cowboy ribeye steaks dry with paper towels. This helps to achieve a nice sear. Generously season both sides of each steak with kosher salt, black pepper, garlic powder, and smoked paprika.

    Allow the seasoned steaks to rest at room temperature for about 30 minutes. This helps to ensure even cooking.

    Preheat your grill to high heat or a cast-iron skillet over medium-high heat. Add the olive oil to the skillet if using.
