    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

    Form the crust

    Press the mixture into the bottom of a 9-inch springform pan, making sure it's packed tightly. Bake in the preheated oven for 8-10 minutes until lightly golden. Remove from the oven and allow to cool.

Filling

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese using an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar and continue mixing until combined.

    Add remaining ingredients

    Add sour cream, vanilla extract, and cornstarch to the mixture. Mix until fully incorporated. Add eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour the filling

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the oven at 350°F (175°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

    Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.

    If desired, wash and prepare fresh berries. Just before serving, sprinkle with powdered sugar to create a light glaze.
