    Season the Steak

    Take the Bone-In Ribeye steak and pat it dry with paper towels. This helps to achieve a better sear. Generously season both sides of the steak with kosher salt, freshly ground black pepper, and garlic powder.

    Let it Rest

    After seasoning, let the steak sit at room temperature for 30-60 minutes. This allows the steak to cook more evenly.

Cooking

    Preheat the Grill or Pan

    Preheat your grill to high heat (about 450°F) or heat a cast-iron skillet over medium-high heat. Add olive oil to the skillet if using.

    Sear the Steak

    Once hot, place the steak on the grill or in the skillet. Sear for about 4-5 minutes on each side for medium-rare, adjusting time based on desired doneness.

    Add Butter and Rosemary

    If using, add butter and rosemary during the last 2 minutes of cooking. Spoon the melted butter over the steak for added flavor.

Resting

    Rest the Steak

    Once cooked to your liking, remove the steak from the heat and let it rest on a cutting board for about 10 minutes. This allows the juices to redistribute.

Serving

    Slice the steak against the grain to ensure tenderness. Serve with any pan juices and garnish with additional fresh rosemary if desired.
