Prepare the Shrimp
Start by rinsing the shrimp under cold water and then pat them dry with paper towels. This will ensure they are not watery.

Set Up Breading Station
In three separate bowls, place the all-purpose flour, beaten eggs, and panko breadcrumbs mixed with salt and pepper.

Bread the Shrimp
Dredge each shrimp in flour, shaking off any excess. Dip it into the beaten eggs, then coat it thoroughly with panko breadcrumbs.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Fry the breaded shrimp in batches, avoiding overcrowding the pan, for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

In a medium bowl, combine the mayonnaise, sweet chili sauce, sriracha, lime juice, and lime zest. Mix well until smooth.
