Method

Prepare the Shrimp

  1. 1

    Season the Shrimp

In a bowl, combine the peeled and deveined jumbo shrimp with salt, black pepper, and garlic powder. Toss to coat evenly and set aside to marinate for 15 minutes.

Make the Batter

  1. 2

    Mix the Batter Ingredients

In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. In a separate bowl, whisk together the cold water and egg. Gradually add the wet ingredients to the dry ingredients, mixing until smooth and well combined.

Prepare the Cocktail Sauce

  1. 3

    Combine Sauce Ingredients

In a small bowl, mix together the ketchup, horseradish, lemon juice, Worcestershire sauce, and salt. Adjust the salt to taste and set the cocktail sauce aside.

Fry the Shrimp

  1. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Batter and Fry the Shrimp

Dip each marinated shrimp into the batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for 3-4 minutes or until golden brown and cooked through.

  3. 6

    Drain and Serve

Using a slotted spoon, remove the fried shrimp from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with the house-made cocktail sauce.
