    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Once cooked, remove the bacon and place it on paper towels to drain excess fat. Reserve about 2 tablespoons of bacon fat in the skillet.

    Sauté the Onion and Garlic

    In the same skillet with the reserved bacon fat, add the diced onion and cook over medium heat for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 2 minutes until fragrant.

    Combine Ingredients

    Chop the cooked bacon into small pieces and add it back into the skillet with the onions and garlic. Stir in the brown sugar, apple cider vinegar, maple syrup, black pepper, red pepper flakes, and water. Mix well to combine.

    Simmer the Mixture

    Bring the mixture to a gentle boil over medium-high heat, then reduce the heat to low. Let it simmer uncovered for about 30 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

    Remove the skillet from the heat and let the bacon jam cool slightly. Transfer the mixture to a food processor and blend until smooth. If you prefer a chunkier texture, pulse just a few times to combine.

    Transfer the bacon jam to a clean, airtight container and let it cool completely before sealing. Store in the refrigerator for up to 2 weeks.
