Make the Flax Egg
In a small bowl, mix the ground flaxseed with water. Let it sit for about 5 minutes until it thickens.

Sauté the Vegetables
In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion, celery, and green bell pepper. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes.

Mix the Ingredients
In a large bowl, combine cooked brown rice, mashed black beans, sautéed vegetables, cajun seasoning, smoked paprika, and the flax egg. Mix until well combined.

Form the Balls
Shape the mixture into small balls, about 1 inch in diameter, and roll them in bread crumbs to coat.

Fry the Boudain Balls
In a large skillet, heat the remaining olive oil over medium-high heat. Fry the boudain balls in batches until golden brown on all sides, about 4-5 minutes. Drain on paper towels.
