Strudel Dough Preparation

    Make the Dough

    In a large bowl, mix flour and salt. Create a well in the center, add egg and olive oil. Gradually mix in warm water until a soft dough forms. Knead for about 5 minutes until smooth. Cover and let rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a skillet, melt butter over medium heat. Add garlic and shallots, sauté until fragrant. Add forest mushrooms and cook until tender. Stir in spinach and cook until wilted. Remove from heat and fold in chopped lobster meat. Season with salt and pepper.

Assembly and Cooking

    Assemble the Strudel

    Roll out the rested dough on a floured surface until thin. Place the filling along one edge of the dough. Roll the dough over the filling to form a strudel. Seal the edges and place on a baking sheet.

    Bake the Strudel

    Preheat the oven to 375°F (190°C). Brush the strudel with olive oil. Bake for 25-30 minutes or until golden brown.

Sauce Preparation

    Make the Cognac Sauce

    In a saucepan, sauté shallots until translucent. Add cognac and let it simmer for a minute. Stir in lobster stock and let reduce by half. Add heavy cream and lemon juice, simmer until thickened. Stir in chopped parsley before serving.
