Spicy Mornay Sauce

Make the Mornay Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Add the flour and whisk continuously for about 1 minute. Gradually add the milk while whisking to prevent lumps. Cook until the sauce thickens, then stir in cayenne pepper, salt, black pepper, and Parmesan cheese. Remove from heat and set aside.

Assemble and Grill the Sandwich
Butter one side of each slice of brioche bread. On the unbuttered side, layer cave-aged cheddar cheese, lobster meat, and then the spicy mornay sauce. Top with another slice of bread, buttered side up. Grill the sandwich in a skillet over medium heat until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
