Making the Dough

Prepare the Dough
In a large mixing bowl, combine the gluten-free flour, sugar, and salt. Add the cubed butter and mix until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Fruit Filling
In a medium bowl, combine the fresh fruit, sugar, cinnamon, cornstarch, and lemon juice. Toss until the fruit is evenly coated. Set aside.
Assembling the Pastries

Roll Out the Dough
Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick. Cut into desired shapes (e.g., circles or squares).

Fill the Pastries
Place a spoonful of the fruit filling in the center of each pastry shape. Fold over and seal the edges by pressing with a fork or your fingers.

In a small bowl, whisk together the egg and milk. Brush the egg wash over the tops of each pastry for a golden finish.
