    Prepare the Trout

    In a bowl, combine olive oil, lemon juice, salt, black pepper, and chopped fresh dill. Mix well.

    Marinate

    Place the trout fillets in the marinade and let them sit for about 15 minutes.

    Slow Poach

    In a shallow pan, add enough water to cover the trout. Heat the water over low heat until it reaches 160°F (71°C). Carefully add the trout fillets and poach for about 15 minutes or until cooked through.

    Rinse and Prepare Rice

    Rinse the jasmine rice under cold water until the water runs clear.

    Sauté Garlic

    In a medium saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.

    Cook Rice

    Add the rinsed rice to the saucepan, stirring to coat it in the garlic butter. Pour in the chicken broth and add salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender.
