    Prepare the Mackerel

    In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Coat the Spanish mackerel fillets in the marinade and let them sit for at least 30 minutes.

    Grill the Mackerel

    Preheat the grill to medium-high heat. Grill the marinated mackerel fillets for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

Pepper Sauce

    Prepare the Pepper Sauce

    Roast the red bell peppers over an open flame or under a broiler until charred. Place them in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel off the skin, remove the seeds, and chop.

    Blend the Sauce

    In a blender, combine the roasted peppers, minced garlic, olive oil, red wine vinegar, salt, and black pepper. Blend until smooth and adjust seasoning to taste.

Braised Kale and Bacon

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the rendered fat in the skillet.

    Sauté Onion and Garlic

    In the same skillet, add chopped onion and sauté until translucent. Add minced garlic and cook for another minute until fragrant.

    Braised Kale

    Add the chopped kale to the skillet and stir to combine. Pour in the chicken broth, add salt and black pepper, and bring to a simmer. Cover and cook for about 15 minutes, or until the kale is tender.

    Finish the Dish

    Crumble the cooked bacon and stir it into the kale before serving.
