Flautas

Rice and Beans

Shredded Chicken

Method

Flautas

  1. 1

    Prepare the Filling

In a bowl, mix the cooked corn, shredded cheese, and salt until well combined.

  2. 2

    Fill the Tortillas

Take a corn tortilla and place about 2 tablespoons of the filling mixture in the center. Roll the tortilla tightly around the filling to form a flauta.

  3. 3

    Fry the Flautas

In a large frying pan, heat the oil over medium heat. Once hot, carefully place the rolled flautas in the oil and fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain excess oil on paper towels.

Guacamole

  1. 4

    Mash the Avocados

In a mixing bowl, mash the ripe avocados with a fork or potato masher until smooth but slightly chunky.

  2. 5

    Mix in Other Ingredients

Add lime juice, salt, diced tomatoes, chopped cilantro, and diced onion to the mashed avocado. Stir until combined.

  3. 6

    Taste and Adjust

Taste the guacamole and adjust seasoning as necessary, adding more salt or lime juice to taste.

Rice and Beans

  1. 7

    Heat the Rice and Beans

In a pot, combine cooked rice and cooked black beans. Add cumin and salt, and heat over medium heat until warm through, stirring occasionally.

  2. 8

    Serve

Once heated, remove from heat and set aside to serve alongside flautas.

Shredded Chicken

  1. 9

    Season the Chicken

In a bowl, mix the cooked shredded chicken with salt and taco seasoning until evenly coated.

  2. 10

    Heat the Chicken

In a skillet, heat the seasoned chicken over medium heat until warmed through, about 5-7 minutes.
