Prepare the Filling

In a skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.

Add Spices

Stir in ground cumin, garlic powder, salt, and black pepper. Cook for another 2 minutes to allow the spices to bloom.

Mix Cheese

Remove the skillet from heat and add 2 cups of shredded cheese to the onion and spice mixture. Stir well to combine.

Prepare Enchiladas

Preheat your oven to 350°F (175°C). Take a corn tortilla, spoon a portion of the cheese filling into the center, and roll it up tightly. Place the rolled tortilla seam-side down in a baking dish.

Repeat

Continue this process for all 12 tortillas, placing them side by side in the baking dish.

Add Enchilada Sauce

Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the remaining 1 cup of shredded cheese on top.

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
