In a large bowl, combine the cooked quinoa, black beans, corn, diced avocado, chopped cilantro, lime juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Lay a whole wheat tortilla flat on a clean surface. Place half of the filling mixture in the center of the tortilla. Fold the sides in and roll it up tightly from the bottom to the top. Repeat with the second tortilla.

Combine Ingredients

In a medium bowl, combine the rinsed garbanzo beans, halved cherry tomatoes, diced cucumber, olive oil, red wine vinegar, minced garlic, salt, and black pepper. Stir gently to combine.
