Cooking Instructions

  1. 1

    Prepare the Ingredients

Start by preparing all your ingredients. Rinse the rice under cold water until the water runs clear. Drain the black beans if using canned beans. Chop the onion and garlic finely, and roughly chop the cilantro.

  2. 2

    Cook the Rice

In a medium saucepan, add 1 cup of rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce heat to low, cover, and let simmer for about 18-20 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

  3. 3

    Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and cook for an additional minute until fragrant.

  4. 4

    Add Beans and Seasoning

Stir in the black beans, salt, and black pepper into the skillet with the sautéed onion and garlic. Cook for another 5 minutes, stirring frequently until the beans are heated through.

  5. 5

    Combine Rice and Beans

Once the rice is done, fluff it with a fork and add it to the skillet with the beans. Stir everything together until well combined and heated through. Adjust seasoning if necessary.

  6. 6

    Add Cheese and Serve

Remove the skillet from heat and stir in the cheddar cheese until melted and well mixed. Serve hot, garnished with chopped cilantro and a squeeze of lime juice on top.
