Tortillas

Rice & Beans

Method

Tortillas

  1. 1

    Make the Tortilla Dough

In a large bowl, mix the flour, baking powder, and salt. Add the vegetable oil and warm water gradually, mixing until a dough forms.

  2. 2

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

  3. 3

    Roll Out the Tortillas

After resting, divide the dough into 8 equal pieces. Roll each piece into a thin circle, about 6-8 inches in diameter.

  4. 4

    Cook the Tortillas

Heat a skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side until lightly browned and cooked through. Keep warm in a towel.

Rice & Beans

  1. 5

    Cook the Rice

In a medium saucepan, bring the vegetable broth to a boil. Add the rice, reduce heat, cover, and simmer for about 15 minutes until the rice is tender.

  2. 6

    Prepare the Beans

In a separate skillet, heat a little olive oil over medium heat. Sauté the diced onion and minced garlic until soft, about 3-4 minutes.

  3. 7

    Combine Beans and Spices

Add the black beans, cumin, salt, and black pepper to the skillet. Stir and heat through for about 5 minutes.

  4. 8

    Mix Rice and Beans

Once the rice is cooked, fluff it with a fork and then combine it with the bean mixture in the skillet. Stir well to combine and heat through.

Chili Sauce

  1. 9

    Prepare the Chili Sauce

In a blender, combine the chiles, tomato sauce, garlic powder, onion powder, and salt. Blend until smooth.

  2. 10

    Heat the Sauce

In a small saucepan, heat the olive oil over medium heat. Pour in the blended chili sauce and simmer for about 10 minutes, stirring occasionally.
