In a medium pot, combine the rice and chicken or vegetable broth. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is fully cooked and the liquid is absorbed. Fluff with a fork and set aside.

Cook the Beef

In a large skillet, heat over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess grease if necessary, then add the taco seasoning and a splash of water. Stir to combine and cook for an additional 2-3 minutes until the seasoning is evenly distributed.

Warm the Refried Beans

In a small saucepan, heat the refried beans over low heat until warmed through, stirring occasionally, about 3-5 minutes.

Assemble the Burros

On each tortilla, spread a layer of refried beans, followed by a scoop of the seasoned beef, a portion of rice, shredded cheese, lettuce, diced tomato, and a generous dollop of sour cream. Drizzle with salsa (red or green) as desired.

Wrap and Serve

Fold in the sides of the tortilla over the filling, then roll from the bottom up to create a burrito. Serve immediately, or wrap in foil to keep warm until ready to eat.
