Tamale Directions

    Prepare Corn Husks

    Soak the corn husks in warm water for about 30 minutes until soft and pliable.

    Make Masa Dough

    In a large mixing bowl, beat the lard or shortening until fluffy. Gradually mix in the corn masa, baking powder, and salt. Add water little by little until a soft dough forms.

    Fill Tamales

    Spread about 1/4 cup of masa dough onto the center of each corn husk. Add a tablespoon of red chile sauce in the middle and fold the sides of the husk over the filling.

    Steam Tamales

    Place the tamales upright in a steamer pot. Cover and steam for about 1.5 hours until the masa is firm and pulls away from the husk.

    Cook Ground Beef

    In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.

    Add Seasoning

    Stir in the taco seasoning and a splash of water. Cook for an additional 5 minutes until well combined.

    Fill each taco shell with the seasoned beef. Top with shredded lettuce, diced tomato, and cheddar cheese.

    Preheat the oven to 350°F (175°C). Warm corn tortillas in a dry skillet to make them pliable.

    Spread a small amount of enchilada sauce in a baking dish. Fill each tortilla with shredded cheese and diced onion, then roll them up tightly.
