Cooking Instructions

  1. 1

    Prepare the Beef

Trim excess fat from the beef chuck roast and cut it into large cubes (about 2 inches).

  2. 2

    Season the Beef

In a large bowl, combine the red chile powder, ground cumin, garlic powder, salt, and black pepper. Add the beef cubes and toss until they are evenly coated with the spice mixture.

  3. 3

    Sear the Beef

Heat olive oil in a large skillet over medium-high heat. Working in batches, sear the seasoned beef cubes on all sides until browned, about 5-7 minutes per batch. Transfer the browned beef to a slow cooker.

  4. 4

    Sauté the Onion

In the same skillet, add the chopped onion and sauté until soft and translucent, about 5 minutes. Transfer the sautéed onion to the slow cooker.

  5. 5

    Add Broth and Lime Juice

Pour the beef broth and lime juice over the beef and onions in the slow cooker. Stir to combine.

  6. 6

    Cook the Beef

Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is fork-tender.

  7. 7

    Serve

Once cooked, shred the beef using two forks and mix it with the sauce. Serve hot with tortillas or over rice, garnished with fresh cilantro if desired.
