Prepare the Fajita Meat
Season the fajita steak or chicken with your preferred spices (such as cumin, paprika, garlic powder, salt, and pepper). Grill or pan-sear the meat over medium-high heat for about 6-8 minutes per side, or until fully cooked. Let it rest for a few minutes before slicing it into thin strips.

Warm the Corn Tortillas
In a dry skillet over medium heat, warm each corn tortilla for about 30 seconds on each side until they are pliable and slightly toasted. Keep them warm by wrapping in a clean kitchen towel.

Assemble the Tortillas
Place a few strips of the cooked fajita steak or chicken on each warm corn tortilla. Top with a generous handful of cheese and sliced jalapenos.

Return the assembled tortillas to the skillet over low heat, cover with a lid, and let the cheese melt for about 2-3 minutes.
