Method

Soup Directions

  1. 1

    Sauté Vegetables

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

  2. 2

    Add Garlic and Carrots

Stir in the minced garlic and diced carrots. Cook for another 5 minutes, stirring occasionally.

  3. 3

    Incorporate Celery

Add the diced celery and cook for an additional 4 minutes until the celery softens.

  4. 4

    Pour in Broth and Tomatoes

Pour in the vegetable broth and add the canned diced tomatoes. Stir to combine.

  5. 5

    Season the Soup

Season with dried oregano, salt, and black pepper to taste. Bring the soup to a boil.

  6. 6

    Simmer and Add Spinach

Reduce the heat to low and let the soup simmer for 20 minutes. Stir in the chopped spinach just before serving, cooking until wilted.

Tortilla Directions

  1. 7

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, salt, and baking powder.

  2. 8

    Combine Wet Ingredients

In a separate bowl, mix water and olive oil together.

  3. 9

    Form Dough

Gradually add the wet mixture to the dry ingredients, stirring until a dough forms. Knead the dough on a floured surface for 5 minutes.

  4. 10

    Rest the Dough

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

  5. 11

    Roll and Cook Tortillas

Divide the dough into equal parts, roll each piece into a thin circle, and cook on a hot skillet for about 1-2 minutes on each side or until lightly browned.
