    Prep the Ingredients

    Start by trimming any excess fat from the beef chuck roast. Cut it into large chunks for easier cooking. Dice the onion, bell pepper, and garlic cloves. Slice the green and red chile peppers, removing seeds as desired for less heat.

    Sear the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the chunks of beef and sear on all sides until browned (about 5-7 minutes). Remove the beef and set aside.

    In the same pot, add the diced onion, bell pepper, and garlic. Sauté for about 5 minutes until they are softened and fragrant.

    Add the sliced green and red chile peppers, cumin, chili powder, salt, and black pepper to the pot. Stir well to combine and cook for another 2 minutes.
