Wash the fresh green chiles thoroughly under cold water. Pat them dry with a paper towel.

Using a grill or a broiler, roast the chiles until the skin is charred and blistered, turning them occasionally for even roasting. This should take about 10-15 minutes.

Peel the Chiles
Once roasted, remove the chiles from the heat and place them in a bowl covered with plastic wrap. Let them steam for about 10 minutes to loosen the skin. After steaming, peel off the charred skin carefully.
