Cook the Fish
Heat a non-stick skillet over medium-high heat. Cook the marinated fish for about 4-5 minutes on each side, or until fully cooked and flaky. Remove from heat and break into pieces.
- 3
Assemble the Tacos
Warm the corn tortillas in a separate skillet. On each tortilla, layer the cooked fish, shredded cabbage, sliced avocado, chopped cilantro, and a drizzle of sour cream.
Rice & Cheese Beans

Cook the Rice
In a pot, bring 2 cups of water to a boil. Add 1 cup of long-grain rice and 0.5 teaspoon of salt. Reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed.
- 5
Prepare the Beans
In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rinsed black beans, garlic powder, onion powder, ground cumin, and 0.5 teaspoon of salt. Cook while stirring for 5-7 minutes, until heated through.
- 6
Combine Rice and Beans
Once the rice is cooked, fluff it with a fork and mix it with the prepared beans. Add the shredded cheddar cheese and stir until melted and well combined.
