    Prepare the Beef Filling

    In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula.

    Add Seasoning

    Once the beef is browned, drain excess fat. Stir in the taco seasoning, green chiles, salt, and black pepper. Cook for an additional 2-3 minutes to allow flavors to meld.

    Assemble the Chimis

    Lay out a mini flour tortilla on a clean surface. Spoon about 2 tablespoons of the beef mixture in the center of the tortilla. Sprinkle with a tablespoon of shredded cheddar cheese.

    Fold the Tortilla

    Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom to form a mini chimichanga. Repeat with the remaining tortillas and filling.

    Cook the Chimis

    In the same skillet, heat a little more olive oil over medium heat. Carefully place the mini chimis seam-side down in the skillet. Cook for about 2-3 minutes on each side until they are golden brown and crispy.

    Remove the chimis from the skillet and place them on a serving plate. Serve with guacamole and sour cream on the side for dipping.
