    Prepare the Chicken

    Clean the whole chicken under cold running water. Remove any innards and pat the chicken dry with paper towels.

    Chop Vegetables

    Peel and chop the carrots and potatoes into bite-sized pieces. Trim the ends of the green beans. Dice the onion and mince the garlic.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for 3-4 minutes until the onions are translucent.

    Add the Chicken

    Place the whole chicken into the pot, breast side up. Pour in 8 cups of water, ensuring the chicken is fully submerged. Add the bay leaves, salt, and black pepper.

    Increase the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot.

    Let the chicken simmer for about 30 minutes, skimming off any foam that may rise to the surface.
