Chile Relleno
Roasting the Peppers
Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for about 20-25 minutes, turning occasionally until they are charred and blistered. Remove from oven and place in a bowl covered with plastic wrap to steam for 10 minutes.
Once steamed, peel the skins off the peppers and make a slit down the side to remove the seeds. Stuff each pepper with Monterey Jack cheese.
Cheese Enchilada
Add salt and pepper to the mixture, then combine with shredded cheese.
Assembling the Enchiladas
Preheat the oven to 350°F (175°C). Soften corn tortillas in a hot skillet for about 30 seconds each to make them pliable.
Fill each tortilla with the cheese mixture, roll tightly, and place seam side down in a baking dish. Pour enchilada sauce over the top and sprinkle remaining cheese.
Bake for 20-25 minutes until cheese is bubbly and golden.
Beef Taco
Cooking the Beef
In a skillet over medium heat, brown the ground beef until fully cooked, about 7-10 minutes. Drain excess fat.
Add taco seasoning and a splash of water. Stir and simmer for 5 minutes, allowing the flavors to meld.
Assembling the Tacos
Warm corn tortillas in a skillet. Spoon the beef mixture into each tortilla.
Top with shredded lettuce, diced tomato, shredded cheddar cheese, and a dollop of sour cream. Add sliced avocado as desired.

Cooking the Rice
Rinse the white rice under cold water until the water runs clear. In a saucepan, combine rice, water, and a pinch of salt. Bring to a boil.
Reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.
Add black beans, salt, and pepper. Stir and cook for another 5 minutes. Stir in chopped cilantro before serving.
