    Prepare the Poblano Peppers

    Roast the poblano peppers over an open flame or under a broiler until the skin is charred and blistered. Place them in a bowl, cover with plastic wrap, and let them steam for about 10 minutes. Once cooled, peel off the skin, make a slit down the side, and remove the seeds.

    Stuff the Peppers

    Stuff each roasted poblano pepper with Monterey Jack cheese. Secure the opening with toothpicks if necessary.

    Prepare the Egg Batter

    In a mixing bowl, beat the eggs until fluffy. Gradually add the flour, salt, and pepper until well combined.

    Fry the Peppers

    Heat the vegetable oil in a deep skillet over medium heat. Dip each stuffed pepper into the egg batter and carefully place them in the hot oil. Fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.

    Make the Enchiladas

    In a separate pan, heat the refried beans until warm. In a skillet, warm the corn tortillas briefly on each side. Spread a spoonful of refried beans onto each tortilla, add some cheese, roll tightly, and place seam-side down in a baking dish.

    Top the Enchiladas

    Pour tomato sauce over the rolled enchiladas and sprinkle with additional cheese. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until the cheese is melted.

    Cook the Rice

    In a saucepan, combine rice, water, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed.

    Prepare the Tostadas

    Fry corn tortillas in a separate skillet until crispy. Top each tostada with refried beans, diced onion, and chopped cilantro.

    Serve

    Serve the chiles rellenos, cheese enchiladas, bean tostadas, and rice together on a plate. Garnish with extra cilantro if desired.
