Cheese Enchiladas

Method

Cheese Enchiladas

    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and bell pepper, sauté until softened, about 5 minutes. Add ground beef, garlic powder, cumin, salt, and pepper. Cook until beef is browned, about 7-10 minutes. Drain excess fat if necessary.

    Assemble the Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the beef mixture and a sprinkle of shredded cheese. Roll it up and place in a greased baking dish. Repeat for all tortillas.

    Add Sauce and Cheese

    Pour enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the remaining shredded cheese on top.

    Bake

    Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

Beef Tacos

    Cook the Beef

    In a skillet, cook ground beef over medium heat. Add taco seasoning and cook according to package instructions, usually about 5-7 minutes until fully cooked.

    Prepare Tacos

    Warm taco shells in the oven according to package instructions. Once warm, build your tacos by adding cooked beef, shredded lettuce, diced tomatoes, and shredded cheese.

    Top with sour cream to taste and serve immediately.

Rice & Beans

    Cook the Rice

    In a saucepan, combine white rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.

    Add Beans

    Once rice is cooked, stir in the drained black beans, garlic powder, onion powder, salt, and pepper. Heat until warmed through, about 5 minutes.

    Fluff the rice and beans with a fork and serve as a side dish with the enchiladas and tacos.
