Cheese Enchiladas

Method

Cheese Enchiladas

    Prepare the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the ground beef, salt, and black pepper, cooking until the beef is browned. Set aside.

    Assemble Enchiladas

    Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with the beef mixture and a sprinkle of shredded cheese. Roll it up and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Pour the enchilada sauce evenly over the rolled enchiladas. Top with the remaining shredded cheese.

    Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

Beef Tacos

    In a skillet over medium-high heat, cook the ground beef until browned. Drain excess fat. Stir in taco seasoning and cook according to package instructions.

    Fill the taco shells with the seasoned beef. Top with chopped lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.

Rice & Beans

    In a saucepan, combine white rice, water, olive oil, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes or until rice is tender and water is absorbed.

    In a small pot, heat the black beans over medium heat. Add garlic powder and cook until heated through, about 5 minutes.
