    Prepare the Batter

    In a large mixing bowl, combine chickpea flour, water, cumin seeds, coriander powder, turmeric powder, red chili powder, salt, and baking soda. Mix until you have a smooth batter.

    Chop the Vegetables

    Chop all the vegetables (onion, potato, cauliflower, green bell pepper, and spinach) and add them to the batter. Ensure that the vegetables are well coated with the batter.

    Heat the Oil

    In a deep frying pan, heat the oil over medium-high heat. Ensure the oil is hot enough by dropping a small amount of batter; it should sizzle immediately.

    Fry the Pakoras

    Using a spoon, drop small amounts of the batter-coated vegetable mixture into the hot oil. Don’t overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side.

    Drain & Serve

    Once done, remove the pakoras with a slotted spoon and drain them on paper towels. Serve hot with green chutney or tamarind sauce.
