Lamb Kadai Ingredients
Method
Lamb Kadai Directions
- 1
Marinate the Lamb
In a bowl, combine the cubed lamb, yogurt, ginger, garlic, turmeric powder, red chili powder, and salt. Mix well so that the lamb is coated in the marinade. Cover and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

- 3
Sauté Onions
Add the finely chopped onions to the kadai and sauté until they turn golden brown, stirring occasionally to prevent burning.
- 4
Add Tomato Purée
Stir in the pureed tomatoes and cook for about 5-7 minutes or until the oil begins to separate from the mixture.
- 5
Incorporate Spices
Add coriander powder, garam masala, and more salt if needed. Stir well to mix all the spices into the tomato-onion base.
- 6
Cook the Lamb
Add the marinated lamb along with the marinade into the kadai. Stir well to coat the lamb with the spice mixture. Cover and let it cook on low-medium heat for about 30-40 minutes or until the lamb is tender, stirring occasionally.
- 7
Garnish and Serve
Once the lamb is cooked, check for seasoning and adjust if necessary. Remove from heat, garnish with chopped fresh coriander, and serve hot with rice or naan.
