Preparation Steps

    Cook the Rice

    Rinse 1 cup of basmati rice under cold water until the water runs clear. Cook the rice according to the package instructions, then let it cool. This step is best done a few hours ahead or the day before, as cold rice will yield better results.

    Prepare the Vegetables

    Dice the carrots and bell pepper. Chop the onion. Mince the garlic. Slice the green onions. Place all vegetables aside for stir-frying.

    Heat the Oil

    In a large skillet or wok, heat 2 tablespoons of cooking oil over medium-high heat until shimmering.

    Cook the Aromatics

    Add the chopped onion and minced garlic to the hot oil. Stir-fry for about 1-2 minutes until the onion becomes translucent and fragrant.

    Add Vegetables

    Incorporate the diced carrots and bell pepper into the skillet. Stir-fry for 3-4 minutes until tender but still crisp. Add the green peas toward the end of this step and cook for an additional minute.

    Combine and Season

    Push the vegetables to one side of the skillet. Add the cooked basmati rice to the empty side. Pour in 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and season with salt and black pepper. Mix everything together, seasoning evenly until the rice is heated through and coated with sauce.

    Finish with Green Onions

    Finally, sprinkle the sliced green onions over the fried rice. Mix well and stir-fry for another minute to combine all flavors.

    Remove the skillet from heat. Serve hot, garnished with additional green onions if desired.
