    Prepare the Vegetables

    Wash, peel, and chop all mixed vegetables into bite-sized pieces. Dice the green bell pepper, onion, and tomato.

    Sauté Aromatics

    In a large pan, heat 2 tablespoons of oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes).

    Add Tomatoes and Peppers

    Add the diced tomato and green bell pepper to the pan. Cook for another 2-3 minutes until the tomatoes are soft.

    Cook the Mixed Vegetables

    Stir in the mixed vegetables and cook for 5-7 minutes until they start to soften.

    Add Coconut Milk

    Pour in the coconut milk and bring to a simmer. Gradually lower the heat and cook for 10-15 minutes until the vegetables are fully cooked and tender.

    Incorporate Fresh Herbs

    Finely chop fresh cilantro and add it to the pan. Stir well to combine all the flavors.

    Taste and season with salt and pepper as needed. Serve hot with rice or bread.
