    Prepare the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain it.

    Cook the Vegetables

    In a large pot, heat 2 tablespoons of oil or ghee over medium heat. Add cumin seeds and fry for a few seconds until fragrant.

    Add Onions

    Finely chop the onion and add it to the pot. Sauté until it turns golden brown.

    Add Ginger-Garlic and Tomatoes

    Stir in the ginger-garlic paste and cook for 1-2 minutes. Then, add the chopped tomato and cook until it softens.

    Add Spices

    Add biryani masala, turmeric powder, bay leaves, and salt. Stir well to combine.

    Combine with Vegetables

    Add the mixed vegetables to the pot and sauté for about 5 minutes.

    Add Rice

    Add the soaked and drained rice to the pot. Gently mix everything together.

    Cook the Biryani

    Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.

    Fluff and Garnish

    Once cooked, remove the pot from heat and let it sit for 5 minutes. Remove the lid and fluff the rice with a fork. Garnish with chopped cilantro and mint leaves before serving.
