Make the Marinade
In a large mixing bowl, combine plain yogurt, grated ginger, minced garlic, and lemon juice. Mix well until smooth.

Add Spices
Add garam masala, cumin powder, coriander powder, turmeric powder, chili powder, and salt. Stir to combine all ingredients thoroughly.

Marinate the Shrimp
Add the shrimp to the marinade and ensure they are all evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes to 2 hours for best flavor.

Prepare the Clay Oven
If using a clay oven, preheat it according to the manufacturer's instructions or get it to a high temperature (around 500°F/260°C). For stovetop grilling, preheat a grill pan over medium-high heat.

Skewer the Shrimp
After marination, thread the shrimp onto skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Roasting
Place the skewers in the clay oven or grill pan. Roast for about 4-5 minutes on each side, basting with oil, until the shrimp are fully cooked and have a charred exterior. Watch closely to avoid overcooking.

Remove from heat, let them rest for a minute, then serve hot with lemon wedges and your favorite chutney.
