Marinate the Mutton
In a large bowl, combine the mutton with salt, ginger-garlic paste, red chili powder, and black pepper powder. Mix well and let it marinate for at least 30 minutes.

Sauté Onions
In a heavy-bottomed pot, heat the oil over medium heat. Add the finely sliced onions and sauté until they turn golden brown.

Cook Spices
Add the slit green chilies, curry leaves, coriander powder, and cumin powder to the sautéed onions. Stir and cook for 2-3 minutes until fragrant.

Simmer
Add about 1-2 cups of water to cover the mutton, bring to a boil, then reduce the heat to low. Cover the pot and simmer for 1-1.5 hours or until the mutton is tender.

Stir in Coconut
Once the mutton is tender, add the grated coconut to the pot and mix well. Cook uncovered for another 10-15 minutes, allowing the flavors to meld.

Adjust Seasoning
Taste and adjust salt as needed. If you prefer a drier dish, cook for a few more minutes until moisture evaporates.

Remove from heat and serve hot with rice, neer dosa, or chapati.
